Over 32 schools, including Decorah and Postville, have pledged to participate in Iowa Local Food Day on Thursday by serving two or more dishes of Iowa grown or raised foods.
Decorah School District Food Service Director Chad Elliott has played the chef role on the Iowa Local Food Day Procurement Team for over a year now. "I am excited to see all the work and planning come together. I represented Decorah on a Iowa Local Food Day webinar and was one of two chefs that developed menu and recipe ideas for the state," shared Elliott.
Local foods are frequently served in Decorah's schools and this is reflected on the menu. Each time a locally grown or produced item is offered, it is tagged as being local.
"The Iowa Food Hub plays a huge role in our ability to organize and supply our menus months in advance," added Elliott.
