Luther College this summer again has two "edible landscapes" on campus.
The gardens next to Valders Hall and Ylvisacker Hall contain produce ready for picking by Luther employees. The gardens grow pesto, kale, pea pods, tomatoes, peppers, basil and beans, among other vegetables.
The goals of these edible landscapes are to demonstrate the beauty of diverse vegetables and edible flowers, reconnect people with food plants and inspire visitors to consider including edibles in their own home landscapes.
