Grass Run Farms is providing ground beef Thursday to feed 24,000 Minneapolis Public Schools students

Grass Run Farms, a grass-fed beef company with operations in Spring Grove which also represents several Winneshiek County farmers, will have its 100 percent grass-fed beef used in tacos served to 24,000 students in Minneapolis on Thursday as part of Minnesota's farm-to-school food initiative.

The meals will not only feature grass-fed beef tacos from Grass Run Farms, but corn & bean salsa corn from Sno-Pac Foods in Caledonia.

The "Minnesota Thursdays" farm-to-school food initiative was launched in September of last year.  It sources seasonal MInnesota-grown food products to school districts throughout Minnesota.

Grass Run Farms founder Kristine Jepsen said, "It's not easy to change eating habits and buying patterns, especially by school systems, (but) the Minneapolis School District is doing a fantastic job."
